I don’t love to cook – I love to EAT!

If throwing coins in fountains and wishing on shooting stars really worked I’d never have to worry about calories or money and I’d eat every meal in the restaurant of my whim. Every dish would be the house specialty and it would be served by beautiful smiling faces that never expected a tip.

But alas, stars and fountains are the things of childhood (childhood, you know, when gaining weight was a good thing!) So being a responsible adult with the open schedule I’ve had,  I’ve adapted. I plan my meals for the week, research what’s on sale, find the best rated recipes, and cook at least once a day.

Because my friends know what high standards I have for food, and seeing my butt shrink over the last year, they’re always asking for recipes. So I’ve decided to start posting them here on my blog.

For a recipe to qualify it must meet all three elements of my holy trinity – Healthy, Cheap, and Easy. (Tasting good goes without saying)

Healthy - The definition of healthy is a hotly debated topic. Which is why I don’t debate it. My definition changes all the time and until nutritional science makes some much needed headway, let’s just assume that I am the holy and omnipotent nutrition goddess who’s always right and reserves the right to change her mind before she’s proven wrong.

Cheap - One of our biggest expenses is food. But food is also our hobby. We love eating it, watching TV about it, going on vacations surrounding it, etc. So we probably spend a little more than most. Therefor, my definition of cheap might differ from  yours, so keep that in mind. But I also plan my meals based around what’s on sale (or what I bought on sale and then froze). I use this website to help, I pay attention to store coupons, and I occasionally print online coupons (I don’t clip from the newspaper).

Easy - Just because I could spend all day cooking doesn’t mean I want to. When people ask if I love to cook I usually lie and say yes because it’s easier than explaining. I don’t love to cook, I love to eat, (if I could just snap my fingers and dinner would be ready, that’s how I’d do it) so I make sure to cook things that are really worth the effort. With that said I am a big believer in slow cooked meals (stuff that cooks for 2-8 hours), but stuff like that usually doesn’t take a whole lot of real work. I’m also a big believer in cooking extra of something one night and then using it in the next night’s meal. But my definition of easy might differ from most in that I pretty much cook from scratch. If I’m not chopping an onion then I’m not cooking.
